My latest mason jar salad for the series on my YouTube channel is a Mexican inspired quinoa and black bean salad. It’s got so much flavor with the peppers, cilantro, lime and more. The salad is vegetarian, yet still filling and hearty thanks to the black beans and quinoa which happens to be a complete protein!
You will need:
1 quart sized Mason jar
Red wine vinegar
1 red bell pepper, roughly chopped
Cooked black beans
Cilantro, roughly chopped
Whisk together 1 tbsp olive oil, 1/2 tbsp red wine vinegar, the juice of 1/2 lime, a dash of smoked paprika, oregano, and salt. Add to Mason jar first.
Add bell pepper. Next add 1/2 cup of cooked black beans.
Add 1 cup of quinoa which should be lightly salted.
Next add 2 tablespoons of roughly chopped cilantro followed by 2 to 3 tablespoons of fresh salsa.
Last, add 1/4 cup cubed avocado. You can add a dash of sea salt oregano and lime to add additional flavor before closing mason jar to store.
Breakfast is the most important meal of the day. When I start the morning with good choices, it is easier to follow throughout the day with more good choices. I’ve created 3 delicious and simple recipes that should suit you if you need something fast, or if you’ve got a little more time to treat yourself in the kitchen. Two out of the three recipes are completely vegan, and one includes eggs and leaves a lot of room for variation for your tastes.

I’ve teamed up with my friend L’aisha who you may know as MakeupanBeautyJunkie to do a week of cleansing. It’s a great way to boost energy, metabolism, and kickstart the new season without getting sick. We’ve decided to do a one week raw food challenge. To make it easier with long days and hard workouts, we’ve opted to do raw food till 4pm, which gives us a chance to have a warm sensible meal for dinner. We will be doing vegan food at dinner time. Is it just me, or are mason jars STILL all the rave?? I really thought this was a passing trend, but it looks like they are here to stay. I have to say, I am here for it! They are super cute and make food very portable. Of course, the original purpose of mason jars was to have an airtight container to preserve foods, but now they are used in so many instances.
Many will be heading outdoors for 4th of July festivities and whether it is to the park, beach, or to a neighbor’s backyard barbecue, making dessert in these cute little containers come in handy.
As for the trifle, I added my own flare and made it a but more healthy. These aren’t made with traditional lady fingers and custard, but instead angel’s food cake and yogurt, and then no added sugar. It’s yummy and it’s the kind of treat that won’t have children bouncing off walls, or adults feeling the guilt from over indulging. I highly recommend you try this– it’s really perfect for any time this summer, not just the holiday.
It’s only Monday morning and I already know this is going to be an extremely busy one! Since I’ve been up rather early this morning, I’m taking a breather and enjoying breakfast in bed and watching a little of Populaire on Netflix.
Mondays are a mixture of anxiety and excitement for many because most are looking to accomplish a whole lot, but also sad the weekend has come to an end.
As far as health goes, Monday is usually the day people say they will begin eating right. It’s a fresh start!
If you follow my Facebook fan page, you know I eat a lot of oatmeal. A few people asked me recently for some new ideas because oatmeal can get rather boring.
This time I had my steel cut oats with lots of ground cinnamon, diced sweet and tart apples, and roughly chopped walnuts.

I’ve been struggling to get to the bottom of some resurfacing inflammation issues with my stomach. I realized even more so on this journey that I will have to be intentional about what I put into my body…even in the moments when I’m starving and seemingly out of options. When I grocery shop, I get a mix of raw food, frozen food, and quick grab-and-go prepared food which is still healthy, but optimal for days when I’m either lazy or short on time.
For dinner I enjoyed medium roasted salsa, blue corn chips, lemony roasted asparagus, and balela, which is a Mediterranean chickpea and black bean salad from the grocery store. This was the most perfect and delicious meal for such a hot summer day!
Yesterday I enjoyed an outdoor event with family and friends. It was a large gathering of food trucks, music, drinks and I think I may have gone a little overboard on sampling the food!
I find that when my week is most stressful, the end of the week is most difficult to eat healthy. By the end of the week I’m tired and have given up on meal prepping or any forethought for nutrition had home out the window.
I know better than this, because I usually know my week will be busy at the very beginning. It’s very important that I stock my fridge with easy-to-grab fresh fruits and vegetables as well as making sure my pantry is stocked with oats and other whole grains that will keep me full and give me the nutrients I need.
This Saturday morning I enjoyed a very simple breakfast of plain Greek yogurt, granola, fresh strawberries, and a drizzle of honey.
With the portions I had of 2/3 cup of Greek yogurt and only 1/4 cup of granola – the entire meal was only 257 cal, but 19 g of protein. I purposely made the meal small so that I will be hungry in the next 2 to 3 hours and can really rev up my metabolism.

I’ve just posted a yummy and easy to make dessert that you’ll love if you love chocolate. It’s naturally sweetened with dates, and it also happens to be vegan! If you want the texture of the cream to be more firmed– just refrigerate for at least 30 minutes before serving. I made more than I needed. so I used the cream for popsicles.
I don’t know about you, but washing dishes is my least favorite chore! This is a shame because I’m constantly creating a mess in the kitchen as I create dishes for this blog and also my YouTube channel. I was especially tired the other day and decided to make myself a little drink to relax and reward myself before bed. I don’t drink alcohol, but I can still have a nightcap! 😉 The ingredients are simple:
Sparkling mineral water
The juice of half of a lime
One lime slice
I think the result is absolutely beautiful, especially since most of the pomegranate seeds float and I stay suspended in the water. Also, the drink isn’t sweet so it shouldn’t derail you from any of your health goals by having it any time of day.
