Sometimes it is fun to take an ordinary food item and refresh it. I do not eat oatmeal every day, but I do eat it very often. I believe Jamba Juice’s delicious steel cut oats are what revived my love of oatmeal and brought back memories of a warm hearty breakfast that sustained me until lunch time in my school days.
Oatmeal is a superfood, it is packed with iron, it is a great source of fiber, and it is a heart-healthy food. The problem with hot cereals is that many of us are constantly on the go and do not have time to prepare. Instant oatmeal does not hold a candle to the unprocessed whole grains that are the steel cut, and do not even have the same hearty and nutty flavor. The solution? Quick Cook Steel Cut Oats.
Quick cook oats cook in just 8 minutes in the microwave or the stove top. I stick to the stove top because in the microwave they have the great tendency to bubble up in containers that are too shallow. The possibilities are truly endless once the cereal is done cooking. Do not forget to add a little pinch of salt to bring out the flavor!
From brown sugar to nuts, fresh or dried fruit– consider the oatmeal your canvas and the toppings to be your color palette. I have found that adding dried fruit such as blueberries or raisins will sweeten the cereal enough to not need sugar. If you must, brown sugar is the way to go, and you do not need much at all.
For my toppings I used:
- 1 small banana, sliced
- 2 tbsp pecan pieces
- 2 tbsp raisins
Other favorite toppings: walnuts, dried apricots, dried blueberries, fresh peaces, baked apples.
